The crisp taste of grapefruit paired with the freshness of mint make for a very refreshing drink. The chia seeds add extra nutrients and a bit of interest as they float around in the pink grapefruit.
Depending on the sweetness of your grapefruit and your preference for a more or less sweet beverage, give it a taste before adding the honey. We left it out and it was perfect for us and our friends. We do have to admit that we also tried it with some vodka and it made a very refreshing cocktail!
If you’re making a batch of this in advance, hold off on adding the soda water until serving.
