We love this vegan version of the classic Caesar salad — fresh, crisp and delicious.
It’s starts with romaine lettuce, dressed with a vegan Caesar dressing, and topped with chickpea croutons and almond parmesan. FYI — the almond parmesan makes a great topping on many other dishes.
The recipe says the avocado is optional but we’re always looking for way to add healthy fats to a dish and we love avocados!
