Cucumber Avocado Gazpacho with Shrimp

We love making gazpacho in many ways and this is a great version for you to try. Creamy, delicious and so satisfying on a hot summer day. Nothing is friendlier for make-ahead meals than a great gazpacho. 

The soup is dairy-free, Paleo and Whole30 friendly — just omit the corn garnish. 

Whip up a batch and garnish with some favorite toppings like shredded roasted chicken, diced peppers and tomatoes!
