Fajita Smashed Sweet Potatoes

Cinco de Mayo only comes around once a year, but we always seem to have a craving for fajitas. This creative spin on the classic fajita is bursting with color and flavor.

These smashed sweet potato fajitas are delicious as is or you can add sautéed chopped mushrooms or a protein of choice, depending on your dietary preferences.

Also, the avocado lime dip is really yummy! We often serve it on its own as a dip for veggies.
