Pickled Red Onions

- Ready inRefrigerate overnight
- 2 Medjool dates, finely chopped
- 1 large red onion, thinly sliced
- 1/4 tsp salt
- 1/4 tsp ground black pepper
- 1/4 tsp Italian seasoning
- 1/2 cup apple cider vinegar
- Place all ingredients in a container with a tight-fitting lid.
- Cover the container and shake to combine.
- Refrigerate overnight. Occasionally stir the onions so those on the top end up on the bottom and properly marinate.
