Pinto posole is a delicious Mexican stew traditionally made with pork. We’re always looking vegetarian options and happily came across this recipe.
This healthy vegan version replaces the pork with pinto beans and is so full of flavor with a nice level of spice. As with most stews, this one get better the next day, so it’s a terrific make-ahead meal.
