Tomato, Eggplant Chickpea Stew

We love recipes like these. This stew is hearty, flavorful, comes together in about 30 minutes, and makes a terrific weeknight meal. 

Delicious on its own as a vegetarian meal or add shredded roasted chicken for additional protein. We’ll roast extra chicken to have on hand during the week so we can add it to quick dinners without the extra prep time. You can also pick up a good-quality roasted chicken from your market — when pressed for time, we do!
