Whole Baked Carrots + Roasted Beet Pesto

They say a picture is worth a thousand words. When we saw this recipe, we didn’t know what to say except, “have to make this recipe now!”  

Some notes on dietary preferences: paleo – leave out the cheese; vegan – swap maple syrup for the honey and omit the goat cheese or substitute a crumbly vegan cheese.

This dish, both beautiful and delicious, makes a wonderful addition to any meal or buffet table.
